King Oyster mushrooms are a type of edible fungi that are not only delicious but also a great vegan substitute for meat. This vegan recipe pairs the king oyster mushrooms with a variety of vegetables and spices to create a savory and satisfying dish.

Ingredients

  • 1 pound king oyster mushrooms
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup vegetable broth

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.
  3. Add the bell peppers and mushrooms and cook for another 5 minutes.
  4. Stir in the smoked paprika, cumin, salt, and pepper and cook for an additional 2 minutes.
