Vegetarian Lasagne Recipe with Aubergine

Ingredients

- 2 large aubergines, sliced into 1/4 inch thick slices - 2 tablespoons olive oil - 2 cloves garlic, minced - 2 tablespoons tomato paste - 1/2 teaspoon dried oregano - 1/2 teaspoon dried basil - 1/2 teaspoon dried thyme - 1/4 teaspoon red pepper flakes - 1/2 teaspoon salt - 1/4 teaspoon ground black pepper - 2 cups marinara sauce - 1/2 cup ricotta cheese - 1/2 cup grated Parmesan cheese - 1/2 cup shredded mozzarella cheese - 1/4 cup chopped fresh parsley

Instructions

1. Preheat oven to 375°F. Line a baking sheet with parchment paper. 2. Place the aubergine slices on the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic, oregano, basil, thyme, red pepper flakes, salt and pepper. 3. Bake in preheated oven for 20 minutes, flipping once halfway through. 4. In a medium bowl, combine the tomato paste, marinara sauce, ricotta cheese, Parmesan cheese, and mozzarella cheese. 5. Grease a 9x13 inch baking dish. Spread 1/4 of the sauce mixture in the bottom of the dish. 6. Arrange half of the aubergine slices in the dish. Spread 1/2 of the remaining sauce mixture over the top. 7. Arrange the remaining aubergine slices over the top. Spread the remaining sauce mixture over the top. 8. Sprinkle with the chopped parsley. 9. Bake in preheated oven for 25 minutes. 10. Allow to cool for 10 minutes before serving. Enjoy!
