Vegan Oatmeal Cookies Recipe Healthy

Ingredients

• 2 cups rolled oats
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 2 tablespoons ground flaxseed
• 1/2 cup coconut oil, melted
• 1/3 cup pure maple syrup
• 1 teaspoon pure vanilla extract
• 1/2 cup vegan chocolate chips
• 1/2 cup chopped walnuts (optional)

Instructions

1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine the oats, baking soda, salt, and ground flaxseed.
3. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until combined.
4. Pour the wet ingredients into the dry ingredients and mix until combined.
5. Fold in the chocolate chips and walnuts (if using).
6. Scoop the dough into 1-tablespoon balls and place on the prepared baking sheet. Flatten slightly with your fingers.
7. Bake for 12-14 minutes, or until golden brown. Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
